CREAMY CHICKEN & CHEESE BURRITO


This post is a little different to our past recipe posts.

This recipe is NOT available in ANY of our Recipe Packs, we have put this together ourselves along with a few others that we will be posting in the future for you all.


With the drastic changes in household expenses, the crazy increase in rent, mortgage fees, groceries and more... We have trialed and tested our own recipes that are incredibly affordable and can feed the whole family.


These recipes will show you the overall macro breakdown by both the whole recipe as well as OUR personal serving sizes. We track our own calories and hit our own targets, so with this in mind please remember that our serving size might not be ideal for YOU. This is why we have also provided you with the overall recipe calories so you can determine how many meals this will make for you.

We have also provided the shopping list WITHOUT any deals or discounts available so you can see the total cost.


How we put our recipes together to track the calories and macros? We use My Fitness Pal. In the menu option on the bottom right you can scroll down and create your own recipe.


Anyways, here is what you came to this post for, the recipe ⬇️


Ingredients;


Coles Basmati Rice (Uncooked) - 200g

Coles Fold n Roll Tortilla - 6 wraps

Chipotle in Adobo Sauce - 30g

Coles Tomato Salsa (I went mild but you can choose whatever you like) - 300g

Coles Light Cream Cheese Spreadable - 250g

Coles Mexican Style Blend Shredded Cheese - 125g

Woolworths Chicken Mince - 1kg

Mingle Chipotle or Taco Seasoning - 15g


Method;


  1. Cook rice in rice cooker or on the stove. *NOTE: Yes, I rinse the rice. I then place it in the rice cooker and fill the water until it goes to my first knuckle above the rice. Once cooked this then weighs very close to 600g, allowing me to put in 100g of cooked rice into each wrap.

  2. In a pan on medium/high heat cook the chicken mince until colour changes then add in your seasoning of choice.

  3. Once chicken is cooked through add in your jar of salsa, the tub of cream cheese and adobo sauce and mix through. Once the cream cheese has melted down, add in your Mexican shredded cheese and mix through.

  4. You can mix your rice in with this as well and dish into equal serves on your wraps however I do not do this.

  5. Heat an individual wrap for 15-20sec in the microwave, add 100g cooked rice, 1/6 of the total weight of filling, wrap up and put on a sandwich press until sealed and lightly browned. REPEAT for each wrap.

  6. Leave until wraps cool before wrapping them in aluminum foil.


Storage;

This makes 6 total wraps for me (Harley). I store 3 in the fridge and 3 in the freezer, my breakfast is now prepped for the week.


Reheat: I reheat the refrigerated Burritos on the sandwich press, they take about 10 min to heat all the way through. The frozen ones I reheat in the oven at 200 degrees, I pop it in and turn it over after 20min and leave for another 20min. This will obviously be faster for you if you have an air fryer instead, maybe 5 - 10min at 200 degrees.


Shopping;


We shop mostly at Coles because it is closer to home. The wraps at Coles are much larger than the Woolworths Jumbo wraps. If you are getting a different wrap, then that will change the calories for the recipe.


Coles Basmati Rice - $18.00 (this was for a 5kg bag - this will not be a continuous weekly cost so technically it would cost you $0.36 per 100g but I will not use that cost).

Coles Fold n Roll Tortilla - $4.50

Chipotle in Adobo Sauce - $6.50 (this will last multiple weeks).

Coles Tomato Salsa - $1.50

Coles Light Cream Cheese Spreadable - $2.90

Coles Mexican Style Blend Shredded Cheese - $4.90 (this will last you 2 weeks as you will only need half for the recipe).

Woolworths Chicken Mince - $10.00

Mingle Chipotle or Taco Seasoning - $2.60


TOTAL Shop - $50.00


Remember, the rice will be used for a long time. I try to make recipes in which I can use everything for the week, so the Mexican cheese and Adobo sauce are the only things that can be used over multiple weeks. For example, when I purchased all of this last week for my meal prep, it cost me $25.00.


MACROS - FULL RECIPE


Total Calories - 5,007

Carbs - 481.5g

Fats - 202.3g

Protein - 310.6g


I make this into 6 burritos at the time of writing the recipe, I use this as my go to for breakfast as I am on a calorie deficit.

Carbs - 80.2g

Fats - 33.7g

Protein - 51.8g

On average the total weekly cost is under $30 for my breakfast. My calorie intake will be different to yours, whilst on a deficit I am sitting at just under 2400 calories per day to gradually reduce body fat whilst I work on strength training.
